Lucky Charms Ice Cream

This recipe is dedicated to my sister. As a kid, she loved picking out the marshmallows in her bowl of Lucky Charms. So, when I was grocery shopping a few weekends ago and I saw Lucky Charms on sale, I thought, hm, maybe I could make cereal ice cream.
Ingredients:
3 cups light cream
1 cup Lucky Charms cereal, no marshmallows
¼ cup + ¾ cup Lucky Charms marshmallows
½ cup sugar
4 egg yolks
½ teaspoon salt
1 teaspoon vanilla extract
1 cup regular marshmallows
1 teaspoon butter

Start by digging through the cereal to separate the cereal and the marshmallows. You'll need a cuppa each.
Take the cereal pieces and spread them out on a sheet pan. Toast the cereal at 350F for 10 minutes until they're golden and you can smell them.
Pour the cereal into a bowl - it'll be sticky because the sugar coating will melt in the oven - and then add in the cream. Let the cereal soak for 30 minutes. After 30 minutes, you'll have a bowl of cereal milk, er, cereal cream. Strain the cereal and set it aside.
Pour the cream into a saucepan with 1/4 cup of marshmallows. Heat the cream until scalding and the marshmallows have melted.
In a separate bowl, whisk together the egg yolks, sugar, and salt until it's a lovely pale yellow.
Temper the yolks with one ladleful of the cream mixture. Keep adding more and more cream, whisking continuously.
Return the cream into the saucepan and heat over a low flame until it's thick enough to coat the back of a spoon. Strain the mixture just to make sure the mixture is smooth and then let it cool. Once the mixture is no longer hot, place it in the fridge and chill for at least 4 hours or overnight until completely cold.
Mix in the vanilla extract and then pour the ice cream base into your ice cream maker and make it according to the manufacturer's instructions. Once the ice cream's formed, pour in the cream-soaked cereal and the rest of the Lucky marshmallows.
Melt a little butter in a saucepan and add in the marshmallows over a low heat. Cook just until the marshmallows are melted. Let it cool slightly.
Add a bit of the ice cream into a freezer-safe container, drizzle in some of the melted marshmallow, add more ice cream, and continue until the containers are full.
Serve with an extra sprinkle of Lucky Charms.
This tastes just like an extra cold bowl of cereal. The toasted cereal adds a lot of cereally flavor so it's an important step that shouldn't be skipped. A bite of this ice cream will bring you shooting straight back to your childhood. It's like that scene in Ratatouille when Anton Ego has a bite of that ratatouille and his mind goes rushing back to his younger self sitting at his country home dinner table to the meal that his mom's just made for him. Remember that? No? Never mind then. Just go make this ice cream and be happy.
