Strawberry Pie

Post holiday blues are hitting me hard today but I still have a post to share. We picked a lot of strawberries when we went to Alstede Farms and we ate a lot of them fresh but I also decided to bake some into a pie.
Ingredients:
pie crust
3 cups fresh strawberries
⅓ cup agave nectar
2 tablespoons corn syrup
1 teaspoon vanilla extract

Strawberries are full of vitamin C.
Start by cutting up 2 cups of berries and putting them in a saucepan with some agave nectar and vanilla extract.
And dump in a little corn starch.
Place the saucepan over medium heat.
Smash the berries with a fork and allow the mixture to come to a boil.
Yum. This is pretty much a jam with a bit of corn starch to help it set up in the pie. Allow the mixture to cool to room temperature.
Grab your baked and cooled pie crust.
Add the jam into the pie crust.
Place some fresh berries in the jam. Smush them in a bit.
And refrigerate for 4 hours or until the jam sets up.
And then slice and serve.
