Spicy Basil Noodle

Another dish I loved at Asian Noodle was their spicy basil noodle. If you make both the pineapple fried rice and this noodle dish you can serve 4 people and everyone can share.

Ingredients [serves 2]:
1 handful rice noodles (about 1 cup cooked)
4 or 5 cloves minced garlic
1/4 cup bell peppers cut into strips
1/4 onion cut into strips
1/4 cup bamboo shoots
1/4 cup baby corn
1 egg, beaten
1 tablespoon soy sauce
1 tablespoon oil
1 teaspoon chili garlic sauce (found in Asian markets, can substitute Sriracha but it won't be the same).
1/4 lb beef - same as with the pineapple fried rice, you can use any protein you like, e.g. chicken, tofu, pork, etc.
1/2 cup basil leaves


A note about the rice noodles: do not boil them or they will be gummy in the saute. Instead, soak them in hot tap water for about 30 minutes.

Again, if you have a wok, use one. However, I used a non-stick pan and it worked out great. Start by sauteing the beef in a little bit of oil until they start to brown. Push them off to the side and add the beaten egg to the other side and let it scramble. Once the egg is cooked, add in the garlic, onions, and peppers and saute until the vegetables are soft. Add in the noodles and soy sauce and stir to coat all the noodles. Then add in the bamboo shoots and baby corn. Lastly, turn off the heat and add in the chili garlic sauce and basil and toss to combine.
